         300 GRAMS WATER: 200 DEGREES FAHRENHEIT
         7 MINUTE STEEP
         STRAIN
- BEST RESULTS USINIG FULL IMMERSION EXTRACTION METHOD SUCH AS A FRENCH PRESS

Cold Brew: 30 grams of cascara  

                   300 grams of cold water.

                   Add cascara to water and leave in

                   refrigerator for 24 hours. Strain

                   and enjoy

THIS CASCARA IS SOURCED FROM A FAMILY OWNED FARM LOCATED IN LLANO
BONITO NEAR NARANJO WITHIN THE PROVINCE OF ALAJUELA, COSTA RICA. THE
CASCARA (SPANISH WORD USED TO DESCRIBE DRIED CHERRY PULP) COMES
FROM SANTA LUCIA, A FORTY ACRE FARM OWNED BY RICARDO PÉREZ AND HIS
FAMILY. RICARDO HAS BEEN CULTIVATING COFFEE FOR THE LAST 37 YEARS
AND PROCESSES COFFEE USING HIS OWN MICRO-MILL. PROCESSING AND
EXPORTING CASCARA IS A NEW DIVERSIFICATION STRATEGY THAT RICARDO
HAS UNDERTAKEN TO PROTECT AGAINST THE MANY RISKS TO COFFEE
PRODUCTION THAT HAVE COME WITH CLIMATE CHANGE IN THE ALAJUELA
GROWING REGION. RICARDO ALSO COLLABORATES WITH HIS COMMUNITY TO
PLANT TREES TO PROTECT THE WATERSHEDS THAT HAVE ALSO BECOME MORE
VULNERABLE AS CLIMATE CONTINUES TO CHANGE.
